Hosted by Dark Glass Patisserie by Callaghan Ward, our classic French patisserie cookery school is a fantastic addition to the 2020 calendar. Callaghan has worked in some of the finest restaurants around the world, including as Head Pastry Chef at Sergio Arola’s double Michelin starred “Gastro” in Madrid, as well helping launch “Central” in Peru – currently rated the fifth best restaurant in the world.
Callaghan will give you the opportunity to learn some elegant French classics, such as the macaroon! With his tried and tested recipes that he’s accumulated on his travels, you’ll be the envy of all your friends.
This course will be conducted in a fun & relaxed manner. Some pastry experience would be an advantage but not essential. The only part we’re confirming for now will be the macaroon, in different flavours and with various fillings. The rest will be left as a surprise on the day!

Please note that the price of £100 is per guest. This covers coffee & pastries on arrival, lunch + a drink at The Milestone, tuition and all ingredients & items to take home.
We will provide handouts and recipes for all classes, and all uneaten items can be taken home to enjoy!
